Zucchinis are according to Ayurveda light, cool and easy to digest, they help to calm pitta in summer time, and when combined with warming spices are also calming for Kapha and Vata.

Basil sauteed Zucchini

1 zucchini sliced
1 tsp ghee
1/2 tsp dried basil
1/8 tsp himalayan salt

1. Heat ghee in saute pan with basil and salt for 30 seconds
2. Add zucchini, mix well to coat
3. Cook on med-low heat flip the zucchini so it is cooked on both sides
4. Add some spinach if desired in last 2 minutes of cooking
