2 cups bitter melon (remove seeds by scraping)

1 TBSP oil or ghee

1 tsp coriander powder

1/4 tsp cumin powder

1/2 tsp cumin seeds

1/2 tsp turmeric powder

1 TBSP coriander leaves

2 TBSP sweet onions

1 tsp grated ginger

1/2 tsp salt

1/4 tsp lime juice

Cut the melon, scrape out the pith and seeds, and soak in 1/2 tsp salt in 500ml water for 2-4 hours

Heat ghee, add cumin seeds fry until golden brown

Add ginger, then onions – cook til translucent

Add turmeric and salt

Add bitter melon…cook on low temp for 20-30 mins until tender

Spread lime juice, mix thoroughly

Add coriander

Enjoy with chapatti, and rice

*Pitta and Vata can add a tablespoon of yoghurt at the end of cooking.

This recipe is good for Pitta and Kapha bodytypes
