Purslane is an easy growing succulent, which is incredibly nutritious and high in omega 3 essential fatty acids along with an antioxidant profile and trace elements and vitamins….and has been used in herbal medicine traditions in Ayruveda (pacifies Vata and Pitta), TCM and others. It loves the heat and is extremely hardy, so perfect for the harsh Australian summer.
1 large cucumber, chopped
1 medium tomato, chopped
1/2 cup purslane leaves chopped
1 jalapeno seeded, chopped
2-3 TBSP lemon juice
Combine all ingredients in a serving bowl
