Vegetables – 2 handfuls (eg. broccoli, snowpea, beans)

Shallots – 1/2 a bunch

Fresh dill- 1/2 a bunch

Fresh mint – 1/2 a bunch

Haloumi cheese – 250 gms

Kalamata olives – a handful

Olive oil

Balsamic vinegar

Salt

Pepper

DIRECTIONS:

  • Lightly steam vegetables
  • Pan fry haloumi in olive oil until lightly brown,
  • Finely chop shallots, dill, mint,
  • Mix altogether
  • Dressing: Mix half oil and vinegar + salt and pepper
